A CONDITION row names a field the condition asks about that requests on the other entity do not carry; a copy leaves such a condition out and starts with none. A FIELD row is a field a step asks its approver about that the other entity cannot ask in the same way, because it does not have the field, the approver may not change it there, or a value the step is limited to is not one it takes there; a copy leaves that field off the step. Steps, approvers, connections, roles and the decision questions always come across.
